In a 2 quart saucepan, melt 1 cup butter. Add 2 cups brown sugar, 1/2 cup corn syrup, and salt.
Bring to a boil - stirring constantly - then boil 5 minutes without stirring on low heat. Stir in 1/2 tsp baking soda, 1 tsp. vanilla. Stir well.
Pop 1 cup popcorn kernels. Pour caramel over popped corn -mix well.
Bake at 250F for 1 hour. Stir every 15 minutes and stir while cooling as well.
