These can be baked then frozen. Reheat in oven, not microwave, to keep pastry flaky.

1/4 cup hard margarine (butter browns too fast)
4 medium onions, finely diced
2 tbsp. all-purpose flour
4 large eggs
1 cup milk
1 tsp. seasoned salt
1/8 tsp. pepper
5 bacon slices, cooked crisp and crumbled
2 cups grated Edam cheese
Pastry, your own, or a mix, enough for 3 shells
Makes about 4 dozen mini tarts
Melt margarine in frying pan.
Add onion.
Saute until onion is soft.
Sprinkle with flour.
Mix.
Remove from heat.
Beat eggs in mixing bowl.
Add milk, seasoned salt and pepper.
Stir in onion, bacon and cheese.
Roll out pastry.
Cut and fit into ungreased mini muffin cups.
Fill with onion mixture.
Bake in 350F oven for 15 to 20 minutes.

Variation:
Bake the filling in 9" unbaked pie shell and serve for brunch or sit-down dinner.
