Carrot Pineapple Muffins

Golden with flecks of carrot and pineapple showing. Good all year round.

2 cups all-purpose flour
3/4 cup granulated sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
2 large eggs, well beaten
1/2 cup cooking oil
1 cup finely grated carrot
1/2 cup crushed pineapple, with juice
1 tsp. vanilla
Makes 12 muffins
Mix first 6 ingredients in large bowl.
Add eggs, cooking oil, carrot, pineapple, juice and vanilla.
Beat on low until just moistened.
Spoon into greased muffin cups, filling 2/3 full.
Bake in 350F oven for 20 to 25 minutes.
