Heat oven to 350F. Trim fat from 8 pork chops, 1 1/2" thick. Place chops in ungreased jelly roll pan, 15 1/2 x 10 1/2 x 1". Top each chop with 1 thin onion slice and 1 thin lemon slice. Spoon 1 tbsp brown sugar and 1 tbsp ketchup on each chop.
Cover with aluminum foil. Bake 2 1/2 hours...

=Stuff veal chop vertically by cutting a deep cross in the top of the chop and filling.Roast in a very hot oven till done, serve with white wine demi-glace.

1.5 oz bread crumbs
6 oz cream
2 oz demi-glace
parsley - chopped
=Mix topping ingredients, chill. Sear venison on both sides, let rest. Top and finish in very oven.
