4 Rockfish fillets, cut into 4 (I'm using 2 thick steaks)
1 medium clove garlic, peeled and chopped
1 ts dried dill, or basil (I have fresh basil, so I'll use that)
1 tb olive oil
1/4 ts salt
Freshly ground black pepper
1 large lemon, thinly sliced (I have Meyer lemons to use)...
2 cups Baked Tortilla Chips
1/4 cup yellow stone-ground or
degerminated cornmeal
2 teaspoons chopped fresh or
1/2 teaspoon dried basil leaves
1 teaspoon chopped fresh or
1/4 teaspoon dried oregano leaves
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 cup white wine or apple juice

=Sear rockfish, top toasted crouton with corn puree mix, top with rock, then caesar dressing and grated parmsan. Wrap in a feuille de brick, secure with toothpick. Roast in 450F oven till brown and fish is cooked. Serve with vin blanc sauce.
