Pots De Creme

4 oz. sweet cooking chocolate
2 tbsp. sugar
3/4 cup light cream
2 egg yolks, slightly beaten
1/2 tsp. vanilla
4 to 6 servings
In medium saucepan, heat chocolate, sugar and cream over medium heat, stirring constantly, until chocolate melts and mixture is smooth.
Remove from heat; gradually beat into egg yolks.
Blend in vanilla.
Pour into demitasse cups.


Fluffy Pots De Creme:
Reduce sugar to 1 tbsp. and cream to 1/2 cup. Beat 2 egg whites until foamy. Gradually beat in 1/4 cup sugar just until stiff peaks form. Fold in chocolate mixture. Pour into souffle cups or other small serving dishes. Chill.
