Pumpkin pie squares
Preheat oven to 350F
3/4 cup all-purpose flour
1/2 cup rolled oats
1/4 cup packed brown sugar
1/2 cup butter
1/2 cup chopped pecans
1 14oz can pumpkin
1 300ml can sweetened condensed milk
2 eggs, beaten
1 tsp. ginger
1 tsp. cinnamon
1/2 cup coconut (optional)
Serves 10 to 12
Combine flour, oats and brown sugar; cut in butter until crumbly; stir in pecans.
Press evenly into 9" square baking pan.
Bake for 15 minutes.
combine remaining ingredients, except coconut.
Pour over base in pan; sprinkle with coconut.
Return to oven and bake 25 to 30 minutes or until set.
Serve warm or chilled.
Garnish as desired.
