Refrigerator Filled Cookies

1 cup shortening (part butter or margarine)
1/2 cup granulated sugar
1/2 cup brown sugar (packed)
2 eggs
2 3/4 cups flour
1/2 tsp. baking soda
1 tsp. salt
Fruit Filling (below) or Mincemeat Filling (below)

Fruit Filling:
1 cup cut up dried apricots, figs or raisins
1/2 cup sugar
1/2 cup water
1 cup chopped walnuts

Mincemeat Filling:
1/2 cup prepared mincemeat
1/4 cup chopped nuts
2 tbsp. quartered marachino cherries
About 5 dozen cookies
In large mixing bowl, mix shortening, sugars and eggs.
Stir in flour, baking soda and salt.
Shape dough into rolls, about 1 1/2" in diameter.
Wrap in waxed paper, plastic wrap or aluminum foil; chill at least 3 hours.
Heat oven to 400F.
Cut rolls inot 1/8" slices.
Place slightly apart on ungreased baking sheet.
Spoon 1/2 tsp. Fruit Filling onto each slice; top with another slice.
Bake 8 to 10 minutes or until golden brown.

Fruit Filling:
In medium saucepan mix all ingredients except walnuts.
Cook and stir over low heat, about 5 minutes, until thick.
Remove from heat; stir in walnuts.

Mincemeat Filling:
Mix ingredients together.
