1 cup milk chocolate chips, or your choice

Melt the chocolate chips in a small heavy saucepan, covered, over low heat, stirring occasionally. (The chocolate can also be placed in a small dish, covered with plastic wrap, and set on the hot plate of a coffeemaker. Turn the coffeemaker on and the chocolate will slowly melt. Stir occasionally. Or, place the chocolate chips in a cup and cook in the microwave on high for 1 to 2 minutes, stirring every 30 seconds.)

Pour the chocolate onto a baking sheet and spread it into a 4-inch square. Smooth the top with a spatula. Allow the chocolate to sit at room temperature for 1 hour or more until it is relatively firm. With a cheese slicer that has a flat blade and a slot at the bottom, press the blade flat on the chocolate and slide it across to make curls. If the chocolate is too soft, allow it to sit for 10 to 15 minutes, testing it every now and then. You will know when it is the right consistency, because this method creates beautiful curls.

Humidity and temperature are major factors in the timing. Do not make these in a humid or hot environment. Additionally, any broken chocolate may be melted again and reset. Store the Chocolate Curls in an airtight container in the refrigerator or freezer.
