chocolate - chopped medium fine
hazelnuts - chopped medium fine

4 oz raisins

4 Tbsp sugar
1 Tbsp sugar - powdered

2 oz marsala
6 oz wine - white

4 oz sugar - to just blond
4 whites
2 Tbsp sugar

2 c cream
2 Tbsp sugar
2 tsp sugar - powdered

=Warm rum, soak raisins. Mix together 1. Blanch 3., add 4., cook in double boiler till just thick (do not scramble!). cool over ice. Whip whites with 2 Tbsp sugar, whip in cooked blond sugar while still hot (like an Italian meringue, do not let sugar go past light blond). Whip cream with sugars, fold together the cooked cream and merigue, then whipped cream and raisins. Mold, inserting layers of mixed chocolate and hazelnut, freeze.
