1/2 cup butter or margarine
3/4 cup white sugar
4 eggs, separated
1 cup finely rolled Ritz cracker crumbs
1/2 cup all purpose flour
2 tsp. baking powder
3/4 tsp. cinnamon
1/8 tsp. cloves
1/2 cup finely chopped pecans or walnuts
2 cups whipping cream
Whipped cherry pie filling
12 servings
Cream butter with sugar.
Add egg yolks.
Beat until light and fluffy.
Combine cracker crumbs, flour, baking powder, cinnamon, cloves, and nuts.
Stir into creamed mixture.
Beat egg whites until stiff.
Fold into batter.
Spread batter in 2 layer pans which have been greased and lined with waxed paper.
Bake @ 350F for 25 to 30 minutes.
Remove from pans and cool.
Spread one layer with whipped cream, cherry pie filling, whipped cream.
Top with second cake layer.
Spread cream around edges and in a ring on top.
Fill center with cherry pie filling.
