Apple Fritters

1 1/2 pounds Apples, peeled, cored, medium dice (1 lb. 8 oz.)
6 Egg yolks
1 pint Milk
1 pound Flour
1 tablespoon Baking powder
1 teaspoon Salt
2 ounces Granulated sugar
1/2 teaspoon Ground cinnamon
6 Egg whites
Powdered sugar, as needed
Yield: 100 Fritters
1. Peel, core and chop the apples.

2. Combine the egg yolks and milk.

3. Sift together the flour, baking powder, salt, sugar and cinnamon. Add the dry ingredients to the milk-and-egg mixture; mix until smooth.

4. Allow the batter to rest 1 hour.

5. Stir the apples into the batter.

6. Just before the fritters are to be cooked, whip the egg whites to soft peaks and fold into the batter.

7. Scoop the fritters into deep fat at 350°F (180°C). Once browned on one side, flip the fritters in the fat to cook until done.

8. Dust with powdered sugar and serve hot.

9. Yield: 100 fritters, 2 Inches Each



Notes: Method: Deep-frying

Variation:

Banana Fritters -- Omit the cinnamon and apples. Add 1 1/2 fluid ounces (45 milliliters) of finely grated orange zest, 4 fluid ounces (120 milliliters) of orange juice and 2 large bananas, peeled and diced (not puréed).
