Green Apple Sorbet

8 fluid ounces Water
3 1/2 ounces Granulated sugar
1 ounce Glucose or corn syrup
1 pint Granny Smith apple purée
Yield: 1 quart
1. Bring the water, sugar and glucose or corn syrup to a boil in a heavy saucepan over high heat. Once sugar dissolves, boil for one minute. Cool, then chill before using.

2. Add the apple purée and place in the container of an ice cream machine and freeze according to manufacturer's instructions.
