Confetti Cannolis

1 container (16oz) whole milk ricotta cheese
1/2 cup + 1 tbsp confectioners' sugar
1 tsp. vanilla extract
1/4 tsp. almond extract
1/2 cup miniature candy-coated baking bits (crushed Smarties or M&Ms will do the trick)
8 prepared cannoli shells

In a large bowl, combine the ricotta, 1/2 cup of the confectioners' sugar, the vanilla, and the almond extract. Using an electric mixer on medium speed, beat well. Stir in the baking bits.

Just before serving, spoon the ricotta mixture into a pastry bag fitted with a large tip. Pipe into the shells from both ends. Sprinkle with the remaining confectioners' sugar.
