1 pkg. (13 oz) frozen apple, blueberry, or cherry blintzes (6 blintzes)
3 large eggs
1 cup reduced fat sour cream
1/2 cup granulated sugar
1/4 cup orange juice
1 tsp. vanilla extract
2 tbsp. packed light brown sugar

Preheat the oven to 350F. Line a 9"x5" loaf pan with the frozen blintzes.

In a medium bowl, whisk together the eggs, sour cream, granulated sugar, orange juice, and vanilla. Pour over the blintzes. Sprinkle with the brown sugar.

Bake for 1 hour, or until the filling is set. Let stand for 5 minutes before cutting into slices.

Makes 10 servings.
