Wow... was this simple and GOOD

4 chicken breasts, cubed
corn starch
2 cloves chopped garlic
3/4 cup orange juice
3/4 cup cranberry juice
1/4 rice vinegar
3 Tbsp. brown sugar
3 Tbsp. chili sauce (I used about a tsp. of red pepper flakes)
salt and pepper
1/4 cup cool water mixed well w/ 2 Tbsp. cornstarch
Sliced green onions for garnish

Dredge the chicken cubes in cornstarch till they're coated well and fry in EVOO for several minutes till coating is crispy. I used about 5-6 Tbsp. EVOO. Remove from pan onto paper towels.

In same pan (you can add a little more EVOO) saute garlic till softened. Then add the OJ, cranberry juice, vinegar, brown sugar, chili sauce, salt and pepper and let it boil for a minute or 3. Add the cornstarch/water slurry and let it simmer till it's thick. Add the chicken back in and heat thru. Garnish w/ green onion and serve over jasmine rice.
