1 lb. beef tenderloin or sirloin steak
2 tbsp. salad oil
1/2 cup beef broth
2 tbsp. sugar
1/3 cup soy sauce
1/2 lb. mushrooms, thinly sliced
1 bunch green onions, cut into 1 1/2" lengths
2 large onions, thinly sliced
3 stalks celery, diagonally sliced
1 can (5 oz) bamboo shoots, drained
3 cups fresh spinach
Steamed Rice

Cut tenderloin strips, about 1/4" thick and 2" long. In large skillet, heat oil; brown meat. Push meat to one side of skillet.

Stir in bouillon, sugar and soy sauce. Place mushrooms, onions, celery, and bamboo shoots in separate sections of the pan. Cover; simmer 10 minutes. Add spinach; simmer 5 minutes. Serve with rice and if you wish, with additional soy sauce.
