Chinese-Style Goulash

1/4 cup butter or margarine
1 small onion, sliced
1 can (4 oz) sliced mushrooms, drained
2 cups chicken broth
1 cup uncooked regular rice
2 cups cut-up cooked chicken
1 green pepper, cut into thin strips
1/2 cup diced celery
1/4 cup light cream
Salt and pepper

Melt butter in large skillet. Cook and stir onion and mushrooms in butter until onion is tender. Add chicken broth; heat to boiling. Stir in rice. Reduce heat; cover and simmer 10 minutes. Stir in remaining ingredients. Cover; cook 10 to 15 minutes longer.

6 to 8 servings
