Cornmeal muffins
Preheat oven to 425F
Grease bottoms of 12 medium muffin cups
1 cup yellow cornmeal
1 cup flour
2 tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1 cup milk
1/4 cup shortening
1 egg
12 muffins
Blend all ingredients about 20 seconds.
Beat 1 minute.
Fill muffin cups 2/3 full.
Bake 15 minutes.
Immediately remove from pan.
