Tart, but not sour, with a sweet, fizzy finish. You'll want to pour this refreshing drink over plenty of ice.

3 cups boiling water
3 medium lemons, sliced
1 tbsp. diced, peeled gingerroot
1 cup granulated sugar
1/2 cup lemon juice
4 cups club soda
Ice cubes
Serves 6
Pour boiling water into large heatproof bowl.
Add lemon slices and ginger.
Cover.
Let stand at room temperature for at least 12 hours.
Strain lemon mixture through sieve into medium saucepan.
Discard solids.
Add sugar.
Heat and stir on medium-high until boiling.
Reduce heat to medium.
Boil, uncovered, for 15 to 20 minutes, stirring occasionally, until reduced by half and slightly thickened.
Remove from heat.
Let stand until cooled completely.
Add lemon juice.
Stir.
Pour into pitcher.
Cover.
Chill for at least 4 hours until cold.
Just before serving, add club soda.
Stir gently.
Makes about 5 1/2 cups.
Pour over ice cubes in 6 medium glasses.
