1-1/4 cups sugar 300 mL
1 cup water 250 mL
peel of 2 lemons, cut in strips and bitter white part removed
1 cup fresh lemon juice 250 mL
4 cups ice water 1 L

Gently boil sugar, 1 cup/250 mL water and lemon peel in a small saucepan 8 to 10 minutes until sugar is dissolved and mixture syrupy; remove lemon peel and cool to room temperature.

Pour syrup into a large pitcher, add lemon juice and ice water and stir well. Add plenty of ice cubes and stir well again. Serve in tall glasses.
