Fettucine with Prosciutto

4 teaspoon Margarine
2 ounce Prosciutto, Cut In Strips
½ cup Scallions, Sliced
2 Garlic Cloves, Minced
½ cup Chicken Broth
2 cup Carrot, Frozen
½ cup Peas, Frozen
3 ounce Fettucine, Fresh
½ medium Tomato, Cut Into 1/2" or 1cm Thick Wedges
2 teaspoon Parmesan Cheese, Grated
Black Pepper, Freshly Ground

Melt margarine in medium skillet over medium high heat. Add prosciutto, scallions and garlic; cook for 3 minutes, stirring frequently. Add broth and frozen vegetables; bring to a boil. Lower heat to medium and simmer 5 minutes.

Cook fettuccine until tender. Drain and place in a serving bowl. Spoon vegetable mixture over fettuccine; add tomato, parmesan cheese, and pepper to taste. Toss to mix well.
