Fish loaf
Preheat oven to 350F
1 1lb can of salmon or 2 6 1/2 to 7oz cans of tuna, drained and flaked
1 cup fine dry bread crumbs
1 cup evaporated milk
1 tbsp lemon juice
1 egg, beaten
Soften in microwave:
1/2 cup chopped celery
1/4 cup chopped green pepper
2 tbsp minced onion

Combine fish, crumbs, vegetables and lemon juice.
Combine milk & egg and add to fish mixture. Mix well. Turn into greased 5 cup ring mold or casserole dish or loaf pan. Bake for 30 to 35 minutes. Invert on warm platter if using mold.
