2-3 lbs. ham butt or fresh pork butt
2 cups sauerkraut
2 cups apple juice
1 bay leaf
6 whole medium potatoes
6 whole medium carrots
6 whole medium onions

Place the meat in a large saucepan, pour the sauerkraut on top, then spread it around the meat. Pour apple juice over meat, add bay leaf, and bring to a boil. Cover and simmer over low heat 1 1/2 hours, then place vegetables around meat. Cover and simmer another hour, or until tender. Remove to a hot serving platter.
