Recipe Feeder
Ingredients:

* 4 to 6 fresh or semi-frozen (preferred) breasts trimmed of all fat and cartilage
* 1 Whole garlic bulb (WalMart)
* 1 Small shallot (mild onion) or fresh red onion (old red onion will smell strong and have strong nasty taste)
* Fresh Basil (five large leaves) (Wal Mart or World Foods)
* 1/2 Cup small chunk semi-crumbled blue cheese (WalMart)
* 1/2 Teaspoon Kosher Salt (WalMart)
* 1 Tablespoon Black Pepper (ground with a spice or coffee grinder if possible, World Foods has whole peppercorns)
* 1 teaspoon Cayenne Pepper (WalMart)
* 1 Cup Japanese Panko crumbs (Econo Foods, comes in a bag)
* 1 Tablespoon Extra Virgin Olive Oil (WalMart)

Dry Ingredient Preparation (the following can all go into one small bowl:

* Mince small shallot or 1/4 cup fresh red onion
* From the garlic bulb, remove, peal, and mince two garlic cloves
* Stack and role five large Basil leaves then cut into small pieces
* 1 tablespoon ground black pepper
* 1 teaspoon cayenne pepper
* 1 teaspoon of Kosher salt

Chicken Prep:

* Slice semi-frozen chicken breast into 1/4" slices keeping breast together.
* Mince each chicken breast until the are just above hamburger texture. Do not mince to the point of mush.
* After mincing breast place into a very large mixing bowl and continue with next breast.
* Add 1 tablespoon olive oil and blue cheese and mix with spatula.
* Combine all dry ingredients with minced chicken and toss with spatula until incorporated .
* Add bread Japanese Panko crumbs and toss unto chicken is not longer wet looking. Your goal is to achieve a consistency.
for patties that will stick together. If not enough add 1/2 cup increments of bread crumbs until desired consistency is reached.
* Make 1/2" thick patties out of minced chicken meat.

Cooking:
* Heat grill for 7 minutes on high
* Brush tops of chicken patties with vegetable oil
* Reduce grill heat to medium high
* Cook patties for 6 minutes per side (important to time this)
* Brush tops of chicken patties with vegetable oil before flipping on final side, cook 6 minutes.
