Tapioca pudding

1 beaten egg
1/4 cup sugar
1/8 tsp. salt
2 3/4 cups milk
1/4 cup minute tapioca
3/4 tsp. vanilla
4 servings
In a pan mix all ingredients except vanilla.
Let stand 5 minutes.
Cook over medium heat, stirring until it boils.
Remove from heat and stir in vanilla.
As soon as it cools enough, pour into glass serving dishes.
Can be topped with friut.
