Pudding type dessert

1/2 cup sugar
1/4 cup cold water
1 cup boiling water
2 1/2 tbsp. cornstarch
1/4 cup lemon juice
1 egg white
1 1/4 tsp. grated lemon rind

Combine sugar and cornstarch in top of double boiler.
Add cold water and stir to make a smooth paste.
Gradually add boiling water.
Cook over medium direct heat until thick & mixture begins to boil.
Cover and cook over boiling water for 8 minutes, stirring occasionally.
Cool.
Add lemon juice and lemon rind.
Beat egg white until stiff but not dry.
Fold in lemon mixture gently.
Spoon into bowl or dessert dishes.
Chill.
Serve the same day it is made.
