Tapioca pudding

2 cups sliced strawberries
1/2 cup sugar
1/4 cup Club House Minute Tapioca
1/4 tsp. salt
1 tbsp. lemon juice
1/2 cup whipping cream

Drain berries.
Add enough water to juice to make 2 cups liquid.
In a saucepan, combine sugar, tapioca, salt and liquid.
Cook over medium heat, stirring frequently until mixture thickens and tapioca is clear. About 10 minutes.
Remove from heat and cool. Add berries and lemon juice.
Chill.
Fold in whipping cream.
