Custard

8 standard custard cups
3 cups hot milk
4 medium eggs
6 tbsp. sugar
1/3 tsp. salt
1/4 tsp. nutmeg
1 tsp. vanilla
nutmeg for sprinkling on top

Scald milk by heating in saucepan until bubbles form around edge.
In a bowl, beat eggs until well blended then add sugar and salt and continue beating.
Slowly add scalded milk while beating.
Stir in vanilla and nutmeg.
Pour custard into 8 individual custard cups or into 1qt baking dish.
Sprinkle sparingly with nutmeg.
Stand custard cups or baking dish in shallow pan containing 3/4" hot water and bake at 350F for 40 minutes for individual cups or 50 minutes for single baking dish OR until custard is set and top is golden.
To test, insert knife at centre of custard. If it comes out clean, custard is done.
