Croissant sandwiches

2 tbsp. oil and vinegar salad dressing
2 tsp. dijon style mustard
1 tbsp. finely chopped fresh parsley
4 oz. roast beef, thinly sliced
2 croissants, halved
lettuce leaves
2 servings
Whisk together dressing, mustard and parsley.
Pour over meat, tossing lightly to coat.
Place in croissant with lettuce leaf.
