tomato sauce

5 lb. tomatoes
2 onions, finely chopped
4 cloves garlic, minced
1/4 cup oil
1/4 cup minced green onion
1 green pepper, seeded & chopped
1 3/4 cups dry red wine or tomato juice
2 tsp. salt
1 tsp. paprika
1/2 tsp. oregano
3/4 tsp. pepper
3/4 tsp. rosemary
1/2 tsp. anise seed
Makes about 10 cups
Wash tomatoes, dip into boiling water, then into cold water.
Remove stem end and peel.
Chop coarsely.
Stir and cook onions and garlic in oil until golden.
Add remaining ingredients.
Bring to a boil, stirring.
Reduce heat.
Cover.
Simmer 1 hour.
Uncover.
Simmer 15 minutes.
Cool.
Transfer to freezer container.
Freeze.
