Wash and cut your pork ribs into serving portions; place in baking pan.

Rinse and drain sauerkraut; place over ribs; sprinkle with caraway, season to taste with salt and pepper, add some fresh minced parsley; cover and bake at 350* F. for 1 1/2 hours.

For dumplings:

2 c. flour
2 t. baking powder
2 eggs, beaten
2 c. milk

(mind you - I eyeball just about everything - so add the milk until you get the consistency you want)

Combine dumpling ingredients; drop by spoonfuls over sauerkraut; cover and continue to bake for 30 minutes or until done.

Serve with a nice hearty seeded rye or sauerkraut rye bread!
