1 lb. White Pea Beans
Pinch of Fresh Ground Pepper
1/2 teaspoon salt
4 HEAPING tablespoons Brown Sugar
2 teaspoons maple syrup (or more, your choice)
1/2 cup Ketchup
1/4 cup Molasses
1 cup 'Mater Sauce(Tomato Sauce)
1 tablespoon Vinegar (I use cider vinegar)
1 teaspoon Brown Mustard or dry(I use dry)
2 teaspoon Onion Soup Mix (or sub real onion, I use real)
6 slices Bacon

1. Pick and rinse Beans

2. Soak Beans overnight in water that covers well.

3. Drain Beans , toss water if you want less music later, otherwise save water....lolol
(in theory re-using the water adds flavour; in practice it adds gaseous emissions)
and add enough to make one quart.
I use 1 quart freshwater to reduce "toxins".
Bring water to boil add beans simmer for 1/2 hour.

4. Mix all seasonings and anything else that sounds good. Put in Crock Pot.

5. Drain beans again, save liquid for later or use fresh water if you know what's good for you.

6. Add beans and enough water or liquid to cover by 1", to crock pot.

7. Arrange Bacon on top and cover.(I scissor-cut the bacon in 1-inch pieces)

8. Cook on HI until boils then on Low for 6 hrs.

9. Remove 1 cup beans, mash then stir back in. (optional step, I have never done it!)

10. Cover again and cook on low 4 to 6 hours or as long as you can stand it.Continue to add Liquid (water) to keep beans just covered.

11. Beans should be soft (usually split) when done.

12. Add wieners if you insist.......lolol

Pressure cooker method ( preferred by some)
1. Fry Bacon in pressure cooker.
2. Add Sauce, Soaked beans (from step 2) and water to cover well (1").
3. Stir then cook for 50 minutes then let cool naturally.
4. Do not release pressure.
5. Beans should be done.
