1 14 3/4-ounce can Alaska salmon, drained and flaked
1 pound penne pasta
1 teaspoon liquid smoke
1/2 cup white wine
1 cup clam juice
1 teaspoon garlic, minced
1 shallot, minced
3/4 cup evaporated skim milk
1/2 tablespoon cornstarch
Fresh dill, chopped, to taste
Salt and pepper, to taste
Olive oil cooking spray
Servings: 8
1. Mix cornstarch with 2 tablespoons of evaporated skim milk, hold aside.

2. Spray a sauté pan with cooking spray, add garlic, dill, shallot and 2 tablespoons of wine and cook for 2 minutes. Add the clam juice, liquid smoke and 3/4 of the salmon; cook for 5 minutes. Remove to a blender or food processor and process to your desired consistency. Add the cooked pasta and toss; cook to heated through. Taste, adding salt and pepper as needed. Serve, garnished with additional dill.

Makes 6-8 servings.
