5 pound Lamb, Diced
1 cup Vegetable Oil
2 ounce Butter
1 cup Garlic Cloves, Chopped
4 ounce Onions, Diced
1 cup Guava, nectar
1 cup Stock, Clear
1 teaspoon Salt
2 ounce Chili Peppers, Green
1 cup Tomato Paste
1 ounce Cilantro

In a large saute pan heat oil and saute diced lamb until well browned on all sides, discard fat and set aside. In the same saute pan add butter and saute garlic and onions briefly. Add guava nectar, stock and salt and bring to a boil. Cover and simmer 40 minutes, add chili peppers and tomato paste and stir well for distribution. Cover and simmer an additional 15 minutes, adjust seasoning and sprinkle with cilantro.
