Chicken Mixture;
1 lb. boneless chicken breast cut into 1 inch chunks,
2 tbsps. soy sauce,
1 tbsp. cornstarch,
Pam cooking spray,
1/2 cup raw cashews,
1 cup sliced celery,
1 medium green pepper cut in chunks,
1 medium red pepper cut in chunks,
1 tsp. finely chopped fresh ginger root,
5 green onions cut in 1/2 inches, (5 optional)
Sauce;
1/4 cup soy sauce,
1 tbsp. white wine, or sherry,(optional)
2 tbsps. brown sugar,
1 tbsp. granulated sugar,
2 tsps. cornstarch,
1 tsp. sesame oil,
Salt And pepper to taste.
Makes 6 servings.
Marinate chicken in soy sauce, and cornstarch mixture for
1/2 hour to 1 hour, stirring occasionally.
Spray large pan, or wok generously with PAM.
Add cashews, and cook on medium heat until golden brown.
Remove, and set aside.
Heat pan over high heat. Spray generously with PAM.
Add chicken, stir-frying just until it changes colour. Remove from pan. Re-heat pan, and spray with PAM.
Add celery, peppers, and ginger, stir-frying until tender crisp.
Add chicken, green onions, and sauce mixture.
Cook, stirring constantly, and until thickened.
Stir in cashews.
