1 can (6 1/2oz) water-packed tuna, drained
1 avocado, peeled, pitted and cut into bite-sized pieces
1 small tomato diced
1 small red onion, finely chopped
1/4 cup frozen corn kernals, thawed
2 tbsp. chopped fresh parsley
2 tbsp. olive oil
1 tsp. lemon juice
Black pepper (optional)
Hot pepper sauce (optional)
Makes 4 servings
In a small bowl, combine tuna, avocado, tomato, red onion, corn, parsley, olive oil, lemon juice, pepper (if using) and hot pepper sauce (if using).
