2 cups all-purpose flour
6 tablespoons sugar
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup shortening
1/4 cup milk
2 teaspoons grated orange rind
1 1/2 pounds Ricotta cheese
1/4 cup mini chocolate morsels
3/4 teaspoon vanilla extract

1. Preheat oven to 375 degrees F. In a medium bowl, combine flour, 2 tablespoons sugar, baking powder and salt. Cut in shortening with pastry cutter or 2 knives until mixture resembles coarse meal. Add milk, 1 egg and 1 teaspoon orange rind; mix until dough forms a ball. Roll out 2/3 of dough on lightly floured surface into a 14-inch circle. Line a 9-inch pie pan with dough; set aside.

2. In a large bowl, beat cheese until smooth. Add 2 eggs, 4 tablespoons sugar, chocolate morsels, 1 teaspoon orange rind and vanilla extract. Mix well; pour into pie shell. Roll out remaining dough and cut into 1-inch wide strips; chill 10 minutes. Place strips over filling in lattice design; crimp edges. Bake 50 to 60 minutes, or until set. Cool.
