2 pkgs. (4-serving size) sugar-free orange gelatin
2 cups boiling water
1 cup cold water
1/3 cup reduced-fat sour cream
1/3 cup part-skim ricotta cheese
1/3 cup reduced-fat cream cheese
1/2 tsp. vanilla extract

Place the gelatin in a large bowl and whisk in the boiling water until the gelatin is dissolved.
Whisk in the cold water.
Cover and refrigerate for 2 hours, or until firm.
In a blender, combine the sour cream, ricotta cheese, cream cheese, and vanilla.
Blend on high speed until light and fluffy.
Cut the gelatin into blocks and spoon into the blender.
Blend for 3 to 4 minutes, or until smooth and frothy.
Pour into 6 dessert dishes.
Cover and refrigerate for at least 1 hour.
