1/4 cup olive oil
1 tablespoon minced fresh garlic
1/2 teaspoon coarse salt
1/4 teaspoon ground black pepper
1/2 cup fresh basil, julienned
2 medium tomatoes, sliced
2 cups grated garlic bread, cubed
OR
2 cups garlic croutons

Servings: 4
Combine olive oil, garlic, salt, pepper and basil. Toss with tomatoes and bread. Prepare EASY SPEEDY OMELETS per instructions. Do not fold. Flip out of pan, but leave flat on plate. Cover with about 3/4 cup tomato/bread mixture.



Notes: Italian cuisine is with us to stay. And with most Italian meals comes savory garlic bread. Garlic bread with toppings is known as Bruschetta. In our Bruschetta omelet, leftover garlic bread gets glamorized when combined with tomatoes and seasonings.
