Dark Chocolate Syrup

2 ounces Cocoa powder
12 fluid ounces Water
8 ounces Granulated sugar
3 ounces Unsalted butter
1 fluid ounce Heavy cream
Yield: 1 pint
1. Mix the cocoa powder with just enough water to make a smooth paste.

2. Bring the sugar and remaining water to a boil in a small, heavy saucepan. Immediately add the cocoa paste, whisking until smooth.

3. Simmer for 15 minutes, stirring constantly, then remove from the heat.

4. Stir the butter and cream into the warm cocoa mixture. Serve warm or at room temperature.

Yield: 1 pint
