2 fluid ounces white wine vinegar
1 ounce dijon mustard
3 tablespoons fresh herbs, assorted, chopped
4 ounces shallots, roasted, chopped
4 fluid ounces rich chicken stock
salt and pepper, to taste

Place all of the ingredients in the bowl of a blender and blend well.
