3 tomatoes
1 pineapple, fresh
1 papaya, fresh
1 green onion bunch, sliced
1 fresh cilantro bunch
2 jalapeños, seeded, minced
3 tablespoons lemon juice
1 teaspoon garlic, chopped
2 teaspoons salt
Servings: 64
1. Core and dice the tomatoes.

2. Peel and dice the pineapple.

3. Peel, seed and dice the papaya.

4. Combine all the ingredients and chill well.

Yield: 2 quarts (2 liter)
