Haricot Bean Salad

1 cup/175g/6oz dried haricot beans, soaked overnight
2 cloves garlic, crushed
2 tbsp/30ml wine vinegar
2 tbsp/30ml olive oil
1 tsp/5ml French mustard
salt and freshly ground black pepper
1 red pepper, seeded and thinly sliced
1 leek, thinly sliced
2 spring onions, green and white parts chopped separately
Serves 4
Place the beans in a large saucepan and cover with fresh water. Bring to the boil and boil fast for 10 minutes, then cover and simmer for 40-50 minutes or until tender. Drain.
Combine the garlic, vinegar, olive oil, mustard and seasoning in a screw top jar, seal and shake well.
Pour over the hot beans and leave to cool. Stir in the pepper, leek and white parts of the spring onions and place in a serving dish.
Sprinkle with green chopped onions and serve.
