Heat oven to 300F. Mix 1 tbsp. egg white and 2 cups pecans or walnuts, stirring until nuts are coated and sticky. Mix 1/4 cup sugar and 1 tbsp. cinnamon; sprinkle over nuts, stirring until nuts are evenly coated. Spread on ungreased baking sheet. Bake 30 minutes.
