Ham and Swiss Biscuits

Preheat oven to 425F
2 cups biscuit mix
1 cup grated swiss cheese
1 cup diced ham
1 green onion, finely sliced
1/2 cup milk
About 10 biscuits
In a large bowl, combine biscuit mix, 3/4 cup cheese, ham and onion. (reserve remaining cheese for later)
Add milk; with fork until dough forms into a ball. (add more milk if necessary)
Turn out onto floured surface; knead 30 seconds.
Roll 1/2" thick. Cut with 2" cutter dipped in flour.
Sprinkle top with remaining cheese.
Bake on ungreased baking sheet until golden brown, 8 to 10 minutes.
Freeze any leftover biscuits for later use. Delicious cold or reheated.
