marshmallows

3 cups granulated sugar
2 cups light corn syrup
1 cup water
1 1/4 cups water
1 oz. powdered gelatin (1 pkg.)
1 tsp. vanilla
1/2 tsp. salt
Confectioners sugar

Combine sugar, corn syrup and 1 cup water.
Cook to 240F.
Dissolve gelatin in 1 1/4 cups water; bring to a boil.
Add sugar, syrup, vanilla and salt and beat for ten minutes.
Line cookie sheet (9 1/2"x15") with white or brown paper. (Do not use waxed paper.)
Spread 1" thick.
Mixture must set for 5 hours after spreading.
Sprinkle powdered sugar on top to prevent sticking.
After mashmallows have set for a 5 hour period, turn over and moisten brown paper on which it was poured. This will make the paper peel off the marshmallow.
After peeling off the paper, sprinkle the top again with powdered sugar and cut in strips about 1" wide.
Turn strips over and cut into 1" squares.
