Put butter in a 1-quart pot. Fill 1/2 full of cut-up onions and 3 to 4 cloves of garlic smashed and cut up.
Cover and simmer until clear, about 1/2 hour.
Add 3-4 cans of beef broth and 4-5 shakes of worcestershire sauce. Bring to a boil. Let simmer and add parmesan cheese.
In soup bowl, place chunks of stale bread. Add soup. Top with mozzarella cheese.
Broil until cheese is melted.
