green tomato mincemeat

6 cups chopped green tomatoes
6 cups chopped peeled apples
3 cups seedless raisins
1 cup butter, shortening, or suet
3/4 cup vinegar
4 cups brown sugar
1 cup mixed peels
1 tbsp. cinnamon
1 tsp. cloves
3/4 tsp. allspice
2 tsp. salt

Chop tomatoes coarsely and cover with cold water.
Bring to a boil and drain.
Repeat twice more, adding fresh water and draining.
Add chopped apples and remaining ingredients.
Bring all to a boil and cook for 1 1/2 hours, until mixture is clear and thickened.
Seal in hot sterilized jars and store in a cool place.
Rum or brandy may be added before putting in jars.
