Makes 5 cups/ 1.1 1/ 2 pints
2 cups/600ml/1 pt milk
2 cups/225g/8oz flour
Pinch salt
2 eggs
butter or oil for frying

1-Mix the milk and flour together until smooth. Add the salt and eggs and beat in well.

2-Heat a little butter or oil in a heavy pan (preferably one used only for pancakes). Tip out excess
butter.

3-Pour in just enough batter to coat the bottom of the pan. Fry on one side only if the pancakes
are to be filled.
